Chorizo with Cherry Tomatoes, Avocado, Feta, and Parsley

Ingredients

  • 1 tablespoon avocado oil
  • 1 tablespoon balsamic or vinegar of your choice
  • 1 teaspoon mustard
  • salt and pepper to taste
  • 1 pound chorizo sausage removed from casings and crumbled
  • 1/2 cup cherry tomatoes quartered
  • 1/2 avocado diced
  • 1/4 cup feta crumbled
  • 1/4 cup parsley stems removed

Instructions

  • Combine the oil, balsamic, mustard, salt, and pepper in a large bowl and whisk to combine. Set aside.
  • Heat a large pan over high heat. Add the chorizo and cook until just beginning to brown, stirring occasionally, about 10 minutes.
  • Add the tomatoes, avocado, feta, and parsley to the bowl with the dressing and toss to combine. Separate onto two serving plates and add the warm chorizo over top just before serving.
