Instructions
Combine the oil, balsamic, mustard, salt, and pepper in a large bowl and whisk to combine. Set aside.
Heat a large pan over high heat. Add the chorizo and cook until just beginning to brown, stirring occasionally, about 10 minutes.
Add the tomatoes, avocado, feta, and parsley to the bowl with the dressing and toss to combine. Separate onto two serving plates and add the warm chorizo over top just before serving.
