This is a highly flavorful mixture with earthy notes and plenty of spice. Cook as breakfast patties, shape into meatballs, or cook loose and add to scrambles, tacos, and salads. Pork is more flavorful but you can make this with turkey as well for a lower fat version that still packs a flavor punch.
Combine all ingredients in a bowl and use your hands to mix thoroughly. Shape as desired and cook or refrigerate for up to 2 days or freeze for up to 3 months.
This can be shaped into patties and cooked as for breakfast sausages, formed into meatballs and baked or pan fried, or cooked as a loose mixture, breaking the meat apart and serving as tacos, a salad topping, or incorporated into breakfast scrambles.
