Chicken Salad with Honey Mustard Dressing

Using pre-cooked chicken means this dish comes together fast for an easy and delicious salad with a sweet and tangy dressing.

Ingredients

Dressing

  • 3 tablespoons mayonnaise
  • 1 1/2 tablespoons yellow mustard
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon apple cider vinegar
  • 1/8 teaspoon stevia glycerite or to taste, I like to add a couple drops, taste, and add more as desired, or add powdered monk fruit, to taste
  • pinch cayenne pepper omit for nightshade-free

Salad

  • 4 cups mixed greens
  • 1 pound chicken breast pre-cooked and sliced
  • 3 strips bacon pre-cooked and sliced, optional
  • 1/4 cup cherry tomatoes halved, omit for nightshade-free
  • 1/4 red onion sliced thin

Instructions

  • Combine dressing ingredients in a large bowl and whisk to combine completely.
  • Add the salad greens to the bowl with the dressing and toss to coat. Add remaining salad ingredients and toss again to coat everything evenly and serve.
