Caramelized Onion, Blackberry, and Mascarpone Cheese Crostini
This is a delicious appetizer that takes a bit of work, mostly due to the caramelization of the onions. However, the flavor payoff it worth it! They are a bit high in carbohydrate so best for special occasions.
1/4cupbutteror oil of choice, such as butter flavored coconut oil, if dairy-free

1keto bread recipeformed as a baguette and sliced thin into 16 slices
olive oil or avocado oil for brushing
8ouncesmascarpone cheeseor kite hill cream cheese if dairy-free
4ouncesfresh blackberries16 berries, halved

Make the caramelized onions
Add the butter to a pan and, when warm, add the onion slices. Toss well to coat the onions in butter and cook, stirring occasionally over medium high heat. After softening, stir every 5 minutes as they caramelize, about 30 more minutes. Towards the end you may need to stir more often, and cook to desired color/caramelization, another 5-10 minutes. If things seem like they are burning or sticking too much, add a couple tablespoons of water to the pan and stir well. Set aside to cool.
Make the crostini
Preheat the oven to 350ºF. Slice bread thin and place on a rimmed baking sheet. Brush with oil and bake at 350ºF for 10 minutes, or until crisp and golden. Set aside to cool.
To assemble
Spread half a tablespoon of mascarpone on a crostini. Add a spoonful of caramelized onions and top with 4 blackberry halves.
