Candied Hibiscus Flowers and Hibiscus Syrup (Bleeding Hearts for Halloween)
Sweet, tangy, chewy, floral with light vegetal notes, these candied hibiscus are like grown up fruit leather. They make a great addition to cheeseboards and are especially festive for Halloween. Worth making alone for the syrup, which is like a floral pomegranate molasses and just as versatile. Use in sauces, dressings, or drinks.
Rinse the flowers well to remove any sand/dirt, which will leave a gritty product if left in.
Combine all ingredients in a pot and bring to a boil. Reduce heat to a simmer and simmer on low, uncovered for 45 minutes, or until the flowers are tender and the liquid is reduced to a syrup. If the liquid level looks like it is getting too low, add a bit more water and continue simmering. Will keep for 2 weeks refrigerated.
