Burrata with Burst Cherry Tomatoes and Pesto

A quick broil of cherry tomatoes concentrates their flavor and the light char lends a slight smokiness. Creamy burrata and basil pesto make for a fun take on traditional Caprese salad flavors. If you’re wanting a bit of crunch in this dish, frying the basil leaves yields a crisp topping to add another texture dimension.

Ingredients

  • 1 pint cherry tomatoes
  • 1 tablespoon avocado oil
  • 8 ounces burrata
  • 1/4 cup pesto store-bought or homemade
  • 2 tablespoons olive oil for garnish
  • fresh basil optional, for garnish

Instructions

  • Toss the tomatoes with avocado oil and season generously with salt. Place onto a broiler-safe pan and broil for 5-8 minutes, or until lightly charred. Allow to cool and serve with the burrata. Drizzle pesto over top and garnish with more olive oil and fresh herbs, if desired.
