Bacon Cheeseburger with Caramelized Onions, Avocado and Burger Sauce

Juicy burgers with melted cheese, sweet onions, savory bacon, creamy avocado, and a tangy burger sauce. This is a delicious weeknight keto meal. Make up the caramelized onions, bacon, and burger sauce ahead of time for a quick prep when you want these.

Ingredients

  • 3 tablespoons caramelized onions
  • 3 slices American cheese
  • 3 strips bacon halved lengthwise
  • 1 pound ground beef divided, and formed into 2 patties
  • 1/2 avocado sliced
  • butter lettuce
  • 6 pickles spears
  • 1 tomato sliced
  • 6 tablespoons burger sauce

Instructions

  • Shape patties into rounds, flattening them down and press a large dimple into the middle of the patty (this will prevent it from bowing up in the center when cooked).
  • Season with salt and pepper just before cooking (helps prevent texture changes from the salt exposure).
  • Grill or cook in a cast iron skillet with a tablespoon of bacon grease over high heat, about 3-5 minutes per side (160ºF internal), or to your liking. Just before the last minute of cooking, add one slice of cheese to the top of each burger, if desired to allow it to melt.
  • To serve, place a couple of butter lettuce leaves on a plate. Top with tomatoes and pickles followed by the burger. Add bacon strips and caramelized onions then drizzle with the burger sauce and top with avocado and serve.

To prepare a large batch of bacon easily, I like to bake it in the oven. It comes out nice and flat and is easy to clean up. Simply preheat the oven to 400ºF, line a large rimmed baking sheet with foil, and place bacon on top so that it is not touching (or it will stick together). Bake for 10 minutes, flip it once, and bake another 5-10 minutes, or until crisp, depending on thickness. Transfer to paper towels to drain excess oil. You can then store this in the refrigerator for a week and re-crisp in the oven or microwave when desired. Save the bacon fat, it is useful for future cooking!
