Ingredients

  • 1 tablespoon lemon juice
  • 1/2 teaspoon ginger fresh grated
  • 1/4 teaspoon salt
  • black pepper fresh ground, to taste
  • 1 avocado diced into small cubes
  • 3 radishes sliced thin
  • 1 1/2 tablespoons peanuts minced, omit for nut free

Instructions

  • Combine lemon, ginger, salt, and pepper in a large bowl. Add the avocado and radish and gently toss to coat. Let sit 20 minutes for flavors to meld. Transfer to a serving plate and garnish with peanuts.
