Asparagus with Garlic and Paprika

Tender and sweet asparagus take on smoky flavors from paprika in this garlic-forward side that gets a lift from a bit of lemon. I like to serve this with a simple slow roast salmon though it goes well with many proteins and especially with Spanish-style mains. This works with broccoli and green beans as well.

Ingredients

  • 1 teaspoon avocado oil
  • 1 pound asparagus trimmed
  • 4 cloves garlic sliced thin
  • 1/4 teaspoon smoked paprika
  • salt and pepper to taste
  • 2 teaspoons lemon juice or more to taste

Instructions

  • Heat the oil in a large pan over high heat. When hot, add the asparagus and toss to coat in the oil. Let cook on high heat without stirring for several minutes to char the asparagus in spots. Then toss and char without stirring again a couple more times, about 5-8 minutes in total.
  • Add the garlic, and about 1-2 tablespoons water, tossing to coat and cook until little to no liquid remains, about 2 more minutes.
  • Off heat, add the paprika and lemon. Season to taste with salt and pepper before serving.
