Peanut Butter (or Any Nut Butter) Protein Bars

Feel free to use any nut butter and nut flour you like here. Peanut flour makes these a bit more crumbly than any other nut flour will. Top with chocolate or leave them plain.

Instructions

  • Combine all dry ingredients for the peanut butter bar and stir to combine. Add the butter and peanut butter and stir until completely mixed. Squeeze a small pinch together well in your hand - if it sticks together it is ready, otherwise, add a bit more butter. If it is too soft, add a bit more peanut flour.
  • Press into an 8x8-inch pan lined with parchment or plastic wrap.
  • Combine the chocolate and butter in a small glass bowl and microwave at 50% power until melted, stirring occasionally. You can also heat the mixture in a double broiler until melted on the stovetop.
  • Pour the chocolate mixture over the peanut butter bars and spread to coat it evenly. Refrigerate until cool and set, about 2 hours, slice into 12 bars and wrap individually with parchment paper. Store in the refrigerator until eating for up to two weeks. They can also be frozen for several months.

Notes

If using a different nut butter and nut flour, the texture and firmness can vary depending on nut used, so adjust to your taste preference with more liquid or dry ingredients.
