BLT Salad with Avocado Basil Dressing

Ingredients

  • 1/2 pound bacon
  • 1 avocado divided
  • 1/4 cup avocado oil
  • 2 tablespoons lemon juice 1 lemon
  • 2 tablespoons fresh basil
  • 1/4 teaspoon salt
  • 1 pound butter lettuce torn into bite-size pieces
  • 1 pint cherry tomatoes halved

Instructions

  • Bake the bacon on a parchment lined pan for 30 minutes in a 375ºF oven, or until browned to your liking, drain excess oil on paper towels then crumble the bacon and set aide.
  • Combine half of the avocado, avocado oil, lemon juice, basil, and salt in a blender or food processor and puree until smooth.
  • Toss the butter lettuce with the dressing then add halved cherry tomatoes, crumbled bacon, and add diced remaining half avocado. Add more salt and pepper to taste. Serve immediately.
