Bang Bang Chicken

Sweet, spicy, and tangy sauce on crispy bites of chicken. This dish goes well with ginger coleslaw as a side.

Ingredients

  • 2 pound boneless skinless chicken thighs, cut into 1-inch cubes
  • 1 egg beaten
  • 2 cups pork Panko I used BBQ flavor, for added flavor
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper fresh ground
  • 12 tablespoon gluten-free soy sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons powdered monk fruit 4 tablespoons granulated
  • 3 Tablespoons sriracha

Instructions

  • Preheat oven to 400ºF and line a rimmed baking sheet with parchment paper.
  • Combine pork panko, cayenne, salt, garlic powder, onion powder, paprika, and pepper in a bowl.
  • Coat all the chicken pieces in egg then dip each piece in the pork panko mix. Place on the baking sheet. Bake for 30-40 minutes or until browned and cooked through.
  • Combine mayonnaise, monk fruit, gluten-free soy sauce, and sriracha in a large bowl. Drizzle over chicken and serve.
