Preheat oven to 400ºF and line a rimmed baking sheet with parchment paper.
Combine pork panko, cayenne, salt, garlic powder, onion powder, paprika, and pepper in a bowl.
Coat all the chicken pieces in egg then dip each piece in the pork panko mix. Place on the baking sheet. Bake for 30-40 minutes or until browned and cooked through.
Combine mayonnaise, monk fruit, gluten-free soy sauce, and sriracha in a large bowl. Drizzle over chicken and serve.
