Cilantro Lime Hearts of Palm Rice

Bright and herbal seasoned rice makes an excellent Mexican-inspired side. This rice alternative uses heart of palm but the same technique can be used for kelp noodle rice or even cauliflower rice.

Ingredients

  • 12 ounce package hearts of palm rice such as Palmini
  • 1 teaspoon avocado oil
  • 1 tablespoon lime juice
  • 1/4 cup cilantro minced
  • salt and pepper to taste

Instructions

  • Thoroughly rinse the heart of palm rice under running water in a large fine mesh strainer. Set in the sink to drain.
  • Heat a large pan over medium high heat and when hot, add the oil. When the oil is hot, add the drained rice and cook, stirring occasionally until no liquid remains, about 5-10 minutes total.
  • Transfer rice to a serving bowl. Stir in lime juice and cilantro. Season to taste with salt and pepper.

Notes

If making with cauliflower rice, skip the rinsing step. You can also rice your own hearts of palm by pulsing canned hearts of palm in the food processor until coarsely chopped and the mixture resembles rice grains.
