Pasta with Fresh Tomatoes and Basil

This dish features kelp noodles cooked in a bright and sweet-tart tomato sauce. Serve it with fresh basil and plenty of Parmesan cheese. This is a quick and easy meal.

Ingredients

  • 1 pint grape tomatoes halved with a handful set aside
  • 14 oz. miracle noodle 2 packages fettuccini style
  • 1/4 cup olive oil best possible
  • 3 cloves garlic sliced thin
  • salt and pepper
  • 1 tsp fresh basil minced (2 tsp if dried)
  • 1/4 cup Parmesan cheese for topping

Instructions

  • Coat a pan in olive oil and once hot add garlic and cook until just beginning to turn golden. Add tomatoes, salt, and pepper, and cook on high heat for about 20 minutes. If using dried basil, add halfway through cooking.
  • While the tomatoes cook, prepare the noodles. Rinse the kelp noodle thoroughly and then place in a large nonstick skillet. Cook over medium high heat until the liquid is evaporated. Reserve until sauce is cooked.
  • Once sauce is done, add the noodles and use tongs to coat the noodles well. Add a handful of halved tomatoes that were kept aside and if using fresh basil, add it off heat and set aside to cool. Top with fresh pepper and plenty of Parmesan cheese.
